India’s food services industry is projected to exceed US$125 billion by 2030, with the organized segment expected to grow at twice the rate of the unorganized market, according to the latest “How India Eats 2025” report by Swiggy and Kearney. Now in its second edition, the report tracks shifting consumer behaviour and major structural changes shaping the sector.

The organized food services market is set to contribute over 60% of overall industry expansion and is on course to overtake the unorganized segment this decade. Despite the strong trajectory, food services currently form just 1.9% of India’s GDP, compared to 5% in China and 6% in Brazil — indicating substantial growth potential. Rising incomes, widespread digital adoption, and consumers’ demand for convenience are key forces powering this shift.

Indian consumers are becoming more experimental and diverse in their choices. The report notes a 20% increase in unique cuisines ordered per customer and a 30% rise in the number of restaurants they try. Late-night ordering is booming — growing nearly three times faster than dinner — with pizzas, cakes and soft drinks leading post-11 p.m. consumption.

Parallel to indulgence, health-focused eating is rapidly accelerating. “Better-for-you” meals that emphasize protein, calorie control and reduced sugar are growing at 2.3 times the rate of overall orders, revealing a dual trend where enjoyment and wellness coexist.

Two major culinary movements are shaping the next wave of food services growth:

India rediscovering its roots: Hyper-regional cuisines such as Goan, Bihari and Pahari are growing at 2–8 times the pace of mainstream offerings. Traditional beverages like buttermilk and sharbat are rising at 4–6 times, prompting global chains to localize menus. Tea consumption is increasing at 3 times the rate of overall beverages, aided by digital ordering.

Global offerings become everyday staples: Korean, Vietnamese and Mexican cuisines have surged 17x, 6x and 3.7x, respectively. Searches for Boba Tea have grown 11x, while Matcha has risen 4x in five years. Sushi, tacos and Korean BBQ have transitioned from niche to mainstream among urban diners.

Swiggy Food Marketplace CEO Rohit Kapoor highlighted the sector’s rapid evolution, noting that Swiggy’s 10-minute delivery service Bolt now contributes over 10% of orders. Kearney Partner Rajat Tuli emphasized that growth beyond major metros is rising twice as fast as in the top eight cities, with Gen Z driving new trends.

To stay competitive, food-service brands are focusing on speed, affordability and experience — from digital-heavy marketing to innovative unboxing-style packaging that elevates delivery dining.
