The Bangkok-based bar is known within the hospitality sector for its structured and technique-driven approach to cocktails. For the Mumbai appearance, Founder Ronnaporn and Head Bartender Fluke will lead the bar operations, offering direct insight into Mahaniyom’s working style and execution standards.
The bar is widely associated with its “Resourceful Cocktails” concept, which focuses on sustainability, efficient ingredient use, and flavour clarity. Its approach reflects a broader industry shift towards responsible mixology, where technique, sourcing and waste management play a central role alongside taste. The cocktails are designed to highlight core ingredients while maintaining consistency and balance.
For this takeover, the menu includes a selection of Mahaniyom’s established cocktails. Watermelon features a clean and mildly spiced flavour profile, while Orange focuses on layered citrus notes with added aromatic depth. Cashew brings forward a creamy, nut-based structure with a smooth finish and Kaffir Lime delivers a sharp, herbaceous character rooted in Thai culinary traditions.
